About the Role

Hilton Riyadh Hotel & Residences is seeking a Chef De Partie – Italian Cuisine for a full-time position in Jeddah, Makkah. This role involves managing an assigned section within the Milano Restaurant kitchen, focusing on the preparation of high-quality Italian dishes. The Chef de Partie will ensure authentic Italian flavors are maintained while adhering to Hilton standards and food safety regulations.

Key Responsibilities

• Prepare and cook authentic Italian A La Carte dishes according to standard recipes.
• Manage the assigned kitchen section during daily operations, including mise en place preparation.
• Specialize in Italian dishes such as pasta, risotto, sauces, pizza toppings, appetizers, and main courses.
• Ensure excellent food quality, taste, texture, and presentation for all dishes.
• Coordinate with the Sous Chef and other kitchen sections to ensure smooth service and timely order delivery.
• Monitor food freshness, quality, and proper storage procedures, adhering to HACCP standards and food safety regulations.
• Control food waste through proper handling, portion control, and FIFO procedures.
• Maintain cleanliness and organization of the assigned workstation and kitchen equipment.
• Assist in training Commis Chefs and junior team members.
• Support menu changes, promotions, and the introduction of seasonal Italian specialties.
• Handle guest special requests and dietary requirements professionally.
• Participate in inventory checks and kitchen meetings, reporting equipment issues to the Sous Chef.

Qualifications and Experience

• Diploma or Degree in Culinary Arts or an equivalent professional culinary qualification.
• Specialized training or certification in Italian cuisine is preferred.
• Minimum of 4–6 years of culinary experience in luxury hotels or premium Italian restaurants.
• Minimum of 2 years of experience as a Chef de Partie in an Italian cuisine section.
• Strong experience in authentic Italian A La Carte operations.
• Proven knowledge of pasta, risotto, sauces, pizza, and Italian cooking techniques.
• Experience in luxury hotel restaurants is highly preferred, with previous Hilton or international luxury brand experience being an advantage.

Work Environment
