• Participer à la préparation des mises en place en respectant les standards Four Seasons;

  
  
  

• Garder une constance dans la qualité de la recette mais aussi dans la méthode de fabrication ;

  
  
  

• Organiser les mises en place complètes et le set-up de sa partie sous le contrôle du superviseur / manager ;

  
  
  

• Gérer les besoins de sa mise en place et le réapprovisionnement en s’assurant que cela ne dépasse pas les besoins du service ;

  
  
  

• Former, motiver, gérer la discipline et superviser le travail des commis de pâtisserie, s’assurant ainsi que tous les standards sont présents ;

  
  
  

• Maintenir la pâtisserie et les équipements propres et prendre soin du matériel ;

  
  
  

• S’assurer que tous les périssables sont conservés à une température appropriée ;

  
  
  

• Noter les éventuels manques dans le stock ;

  
  
  

• Ranger aux endroits appropriés les produits non utilisés ;

  
  
  

• Couvrir et dater tous les périssables ;

  
  
  

• Assister aux plans et actions de correction des problèmes de coût des aliments : contrôler le gaspillage des aliments, les pertes et les consommations ;
