Title: Operations Director – Restaurants & Coffeehouses

Scope: Three restaurants and coffeehouses

Reporting to: Deputy CEO

Job Purpose

The Operations Director will have overall responsibility for the operational, commercial, and financial performance of the business across its three restaurants and coffeehouses.

The role will lead the day-to-day running of all outlets while driving sales growth, profitability, operational efficiency, customer satisfaction, and brand consistency. The Operations Director will establish clear performance standards, develop strong management teams, and ensure that each outlet achieves its business objectives.

The role requires a hands-on, commercially minded leader who can balance operational excellence with revenue generation, cost control, and sustainable business growth.

Key Performance Indicators (KPIs)

Performance will be assessed against agreed targets, including:

• Total sales growth and achievement of budget.
• Outlet-level and consolidated operating profit.
• Gross profit margin and food and beverage cost percentages.
• Labour cost percentage and labour productivity.
• Stock accuracy, wastage, and inventory control.
• Average transaction value and customer traffic.
• Customer satisfaction, complaints, and repeat business.
• Operational audit scores, food safety, and brand compliance.
• Employee turnover, staffing stability, and management development.
• Timely implementation of agreed business improvement plans.

Qualifications and Experience

• Bachelor's degree in Hospitality Management, Business Administration, or a related field is preferred.
• Significant progressive experience in restaurant, café, or multi-site food and beverage operations.
• Proven experience managing multiple outlets and leading outlet managers.
• Demonstrated commercial acumen and experience in sales growth, budgeting, cost control, and P&L management.
• Strong understanding of food and beverage costing, inventory control, workforce planning, and operational reporting.
• Experience developing teams, implementing procedures, and improving business performance.
• Strong leadership, analytical, communication, and decision-making skills.
• Ability to combine strategic thinking with hands-on operational involvement.
